Wild Foraged Chanterelle Mushrooms

One upside to a mild summer is an early and robust chanterelle season! Despite many attempts to grow these mushrooms commercially they can only be found in the wild and a cool wet summer has led to an early flowering of this coveted fungi. With a rich buttery mild flavor chanterelles are a culinary juggernaut delicious served with steak, pork, fish and eggs or in a delicate sauce served over pasta or rice.
